Had steeped two green tea bags in water in a two liter jug overnight, so that it would be cold and ready for today. I will experiment this week with different types of fruit and vegetable flavors. Tomorrow, I have watermelon water planned.

egg-salad-lettuce-wrapsFast breakfast this morning. It’s a Monday, and a busy day was shaping up. Remember that broiled chicken I had for lunch yesterday? Well, there was a chicken leg and thigh leftover that I warmed up and had with my coffee.

I grabbed a handful of trail mix, 90% nuts and seeds, with a few raisins and dried cranberries, and hit the road to work.

I came home for lunch, hard boiled up some eggs and had two egg salad lettuce wraps. Last time I tried lettuce wraps (with pastrami and turkey, they were good, but I couldn’t help but feel like something was missing.

So, this time I buttered the lettuce leaves, before I loaded the egg salad in, and they turned out delicious. A sandwich of any type always goes better with butter, does it not? Yummm.

meat-loaf-and-asparagus-tipsAlso, since I did not have leaf lettuce, I had to make do with Romaine. Romaine does not bend or wrap well… Oh, well. There is always experimentation when you are going for it. Now I know for next time.

For dinner, my wife had a meat loaf in the oven. She makes it mini-size. Just enough for the two of us. Steamed asparagus tips brushed with butter, made up the remainder of the plate, along with my cold green tea water for drinking. I topped it off with an after dinner coffee, with just cream, no sugar or stevia this time.

I have my mind on a raw frozen dessert (key lime delight) tonight made up of fresh raw ingredients. No worries, it does not contain added sugar other than what the ingredients provide themselves. Last time I tried this, it was sinfully delicious. And yet it is nutritious and good for you. I’ll let you know how it turns out tomorrow. Here is the pic of the last one I made…
